Refined Sugar-Free Peppermint Patties

(gluten-free; dairy-free)

With Halloween around the corner, I can't help but think about all of the delicious candy I sued to eat when I was a kid. My favorite? Definitely York peppermint patties. Soo of course that means I had to create my own version of these refreshing little masterpieces. ;)

Recipe:

  • 2 cups powdered monkfruit (I used Lakanto)
  • 1/4 cup raw honey
  • 1 tsp peppermint extract
  • 1/3 cup dark chocolate 
  • 1 tsp coconut oil

Mix the honey and monkfruit powder in a food processor until it can easily be formed into patties. Put the patties on parchment paper and freeze for 30 minutes. After frozen, melt chocolate with coconut oil in microwave for 45 seconds, stirring occasionally. Coat in chocolate and put it back on the parchment paper and refrigerate until hardened. YUM.
