Sweet and Savory Sweet Potato Toast

(gluten-free; vegan)

As much as I love eating sweet potato, squash, and any other large/hard food item, it can be such a pain in the you-know-what to slice up. Thankfully I have a Kuma chef knife that makes slicing and dicing ridiculously easy. 

Clearly sweet potato toast was on the menu, and variety is the spice of life and all so I made it four ways. 

first: maple almond butter + banana + chia seeds
second: vegan chipotle mayo + bacon
third: peanut butter + chocolate drizzle
fourth: apple butter + fresh raspberries
