Chocolate Chip Protein Cookies

(gluten-free; dairy-free)

Chocolate chip protein cookies FTW. I used Chapul protein, which provides an amazing, sustainable source of complete protein, iron, prebiotic fiber, and vitamin B12. Oh and on top of that, it tastes delicious. What's not to love?

Recipe:

  • 3/4 cup almond flour
  • 1/2 cup GF oat flour
  • 2 scoops Chapul Revolution vanilla protein
  • 1 egg
  • 1/2 cup melted coconut oil
  • 2 tbs maple syrup
  • 1 tbs vanilla extract
  • 1 tsp baking powder
  • 1 tsp pink salt
  • 1 cup vegan dark chocolate chips

 

Baked them at 325 for about 10 minutes (I like mine slightly undercooked). SO GOOD.
