Homemade Salted "Twix" Bites

(gluten-free; dairy-free)

Happy Halloween! In honor of this candy-eating day, I had to whip up a version of one of my favorite traditional candies, Twix. The cookie and caramel combo? Oh yeah.

Well the good news is that it can be made gluten-free, dairy-free, and soy-free...and it's so delicious. YAS.

"Caramel" layer:

  • 12 pitted dates
  • 1 tbs almond butter
  • 1 tsp vanilla extract

"Cookie" layer:

  • 1/4 cup coconut flour
  • 3 tbs Heavenly Organics acacia honey
  • 3 tbs coconut oil

Chocolate dip:

  • 1/2 bar vegan dark chocolate
  • 1 tsp coconut oil
  • Pink salt (optional - for topping)

In a mixing bowl, combine all cookie layer ingredients. Mix until crumbly and sticky, and form into mini square bites on parchment paper.

In food processor, combine all caramel ingredients and pulse until a sticky, crumbly mixture. Form into mini square bites and stick on top of each cookie layer.

Stick cookie/caramel bites in the freezer for a few minutes to allow it to harden.

Combine chocolate and coconut oil and allow to melt (45 seconds in the microwave would work).

Take cookie/caramel bites from the freezer and individual dip each of them into the chocolate and place back on the parchment paper. Sprinkle pink salt on top of each bite.

Stick in the refrigerator for an hour or so to allow chocolate to harden and then ENJOY.
