Gluten-Free Cauliflower Protein Brownies

Most of you probably know by now that I am OBSESSED with cauliflower. There's just so much you can do with it! So of course this means I had to try it in some baked goods to see how they would come out, which is how these CAULI BROWNIES were born! I CANNOT believe how insanely fudgy and chocolately they were. Whoaaa baby. 😍

Ingredients:

  • 1 cup cauliflower (steamed)
  • 6 tbs coconut flour
  • 3 scoops chocolate Paleo Products chocolate protein
  • 1/4 cup raw stevia
  • 1/2 bar unsweetened chocolate, melted
  • 2 tbs unsweetened NuNaturals Dutch cocoa powder
  • 2 eggs
  • 3 tbs coconut oil, melted
  • 2 tbs unsweetened applesauce
  • 1 tbs vanilla extract
  • 1 tbs almond butter
  • 1 tsp baking powder
  • 2 scoops Sports Research collagen peptides {optional}

Combine all ingredients into a food processor and blend until smooth. Pour mixture into parchment-lined brownie pan and bake for about 45 minutes at 325 degrees.

I like my brownies a little undercooked and fudge-like, so if you like them more cake-like, keep them in a little longer and/or add more coconut flour.

Per brownie: 90 calories | 5g fat | 2 net carbs | 1g sugar | 8.5g protein (more than I estimated in my story 🤗)
