Mint Chocolate Cups

(gluten-free; vegan)

Mint. Chocolate. Cups. Mint recipes are my faaave so these were definitely much needed. 

  • 1 unsweetened baking chocolate bar, melted
  • 1 tbs coconut oil, melted
  • 1 tbs maple syrup or raw honey
  • 1 tsp peppermint extract
  • sprinkle of pink salt {optional}

Combine chocolate and coconut oil and microwave for about 60 seconds until melted. Add sweetener of choice and peppermint extract and mix well. Pour mixture into muffin tin and refrigerate for a couple hours until hardened. So easy!
