No Bake Date + Almond Protein Bars

(gluten-free; can be made vegan)

Made no bake date + almond protein bars to enjoy for the ride home from New Jersey while visiting my in-laws.  They're the perfect easy meal prep snack!


  • 12 pitted dates
  • 1 cup raw almonds
  • 1 scoop Sports Research collagen peptides {optional; omit for vegan}
  • 2 tbs almond butter
  • 1 tsp vanilla extract
  • dark chocolate, melted {for topping}
  • white chocolate, melted {for topping; omit for vegan}
  • 1 tbs coconut oil, melted

Throw all ingredients (except chocolate) into a food processor and process until its begins to form into a ball. Take mixture and roll onto parchment-lined brownie pan. Melt dark chocolate with 1/2 tbs coconut oil for 45 seconds until melted. Follow the same process for white chocolate. Drizzle the mixture with chocolate and ENJOY.
