Strawberry Rose Collagen Muffins

After doing a lot of yard work and planting a TON of different flowers, I was beginning to feel creative. What if I incorporated some edible rose petals into a recipe? Hmmmm....

Well, spoiler alert: it happened....and I'm so glad it did. The combination of the strawberries and edible rose petals almost gave it a fruity lavender flavor that was so so good (or maybe I'm making that up but at least what's what it tastes like to me!).


Ingredients:

  • 1 egg
  • 3 tbsp stevia-fortified coconut sugar {or sweetener of choice}
  • 1/3 cup coconut oil, melted
  • 2 tbs cashew butter
  • 1/4 cup fresh strawberries
  • handful of edible rose petals {optional but does add a nice flavor and color}
  • 1 tsp almond extract
  • 2/3 cup Namaste Foods sorghum flour
  • 2 tbs coconut flour
  • 1 scoop Ancient Nutrition vanilla bone broth protein {or protein of choice}
  • 2 scoops Sports Research collagen peptides
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp maca {optional}

Combined everything in a food processor and blended until smooth. Poured the mixture into muffin tins and baked for about 25-30 minutes at 325 degrees.

Time to get back to yard work. Perhaps I'll come up with another creative recipe after round 2!
