Date + Almond Brownies

(gluten-free; vegan)

Enjoying this beautiful day and eating some of the easiest and fudgiest (is that a word?) brownies everrrrr. These can easily be made vegan OR paleo, primal...whatever tickles your fancy. Only a few key ingredients and no baking required! Why can't all desserts be this way?

I added collagen to them, but they can easily be made vegan if collagen is omitted. 


  • 12 dates
  • 1 cup raw almonds
  • 2 tbs NuNaturals Dutch cocoa powder
  • 1 tbs vanilla extract
  • 1 scoop Sports Research collagen peptides {optional}

That's it! Throw everything into the food processor and pulse into a sticky, yet moldable, consistency and form into brownies on a parchment paper-lined brownie pan.

If you want to add a chocolate ganache (DO IT - it's SO good), simply melt unsweetened baking chocolate with some coconut cream in the microwave and mix well. If you want it sweeter, add some raw honey or stevia drops to taste. Pour mixture on top of the brownies and let it sit in the fridge for about 2 hours to set. Done and DONE.
