[ad] Coming up with a healthy dinner recipe can be a challenge. Between running a business and having a 15-month-old, this is something I struggle with daily (yes, even has a healthy food blogger!). It’s so easy to just stick to something convenient, but convenience does not always translate to healthy. Right?

Well, not always – it’s just about sourcing the right ingredients and products that make dinner simple, easy, healthy and also delicious. One dinner recipe I LOVE to make is tacos. It’s a great meal for the entire family, and it’s perfect for even the pickiest of eaters because everyone can apply whatever toppings they want!

Taco Tuesdays were a huge tradition in my family. We always knew that on Tuesday’s, tacos would be on the menu – and we would be SO EXCITED. Come on, who doesn’t love a good taco?! As we got older, Taco Tuesday starting expanding. My brother and I would bring our friends over, and they would be just as excited about the Taco Tuesday tradition as we would be. When I was in college, and even after college, I would drive 45 minutes to my parent’s house from my apartment for the event, and it’s something I looked forward to every week.

My parent’s loved it because prepping tacos doesn’t take a ton of work, and it’s great for feeding in bulk – whether you’re feeding one person, two, or 20!

A few years ago, I had found out about al fresco chicken sausages when I was shopping for something that was healthy but easy to prep. What I love about their sausages is that they come fully cooked, so all you need to do is heat them up and they’re ready to eat, and they’re so flavorful! They were my go-to for years when I was working in financial services and didn’t have any flexibility with my work hours, yet still wanted to have some healthy things to eat at work.

Last Tuesday, I was getting ready to prep a Taco Tuesday meal, and realized we had a lot of al fresco chicken sausage in the fridge. I had a YUREKA! moment (dramatic, I know), and realized I could just fry up the chicken sausages really quickly, add a few (optional) spices, and use the sausages to make the EASIEST spicy chicken sausage tacos ever! The meal was done in literally minutes and it was so insanely tasty!

My go-to’s for toppings are: greens, tomatoes, avocado (or even better, guacamole!), salsa, and Mexican cheese – but you can also add beans, peppers, corn, sour cream – the opportunities are endless! It’s great for the whole family because you can pick toppings and everyone can just add whatever toppings they prefer. I used corn tortillas for this recipe, but you can substitute almond flour/cassava/coconut flour tortillas for other gluten-free options, or regular flour tortillas as well!

Red Pepper Chicken Sausage Tacos (makes 4):

Ingredients:
- one package al fresco roasted red pepper + asiago chicken sausages, chopped
- 1 tomato, chopped
- 1 avocado, chopped
- 2 cups arugula {or fresh greens of choice}
- 1 tablespoon avocado oil {can substitute olive oil}
- 4 corn tortillas {or tortillas of choice}
- 1 teaspoon cumin {optional}
- 1 teaspoon cayenne pepper {optional}
- 1 cup shredded Mexican cheese {optional}

Directions:
1) Place frying pan on stovetop over medium heat. Pour 1 tbs of oil into pan and allow it to get warm.
2) Chop al fresco chicken sausages into halves, and then chop the halves into smaller pieces. Chop tomato and avocado into similar-sized pieces.
3) Place the chopped al fresco chicken sauce into the hot pan. Add 1 teaspoon of cumin and cayenne pepper for extra flavor.
4) After a couple minutes, flip the chicken sausages to allow them to brown on both sides.
5) Place greens into the bottom of the corn tortillas, followed by a layer of the al fresco chicken sausages, avocado, and tomato.
6) Top with shredded cheese, and/or any additional toppings as desired. 
7) Enjoy!
