Gluten-Free Blueberry Matcha Muffins

Let’s talk MATCHA. 🙌🏻 Matcha is one of my favorite ingredients because it’s filled with antioxidants and is a great natural mood booster. The Ujido Matcha brand is my go-to because they produce the highest quality matcha, sourced directly from Japan.

Though I love my matcha lattes every morning, I also use matcha in a ton of recipes. Including this gluten-free blueberry matcha muffins!

They’re only a few simple ingredients and so tasty!

Recipe:
1 cup cassava flour
1/4 cup almond flour
1/4 cup coconut oil, melted
2 eggs
3 tbs maple syrup
1 tbs vanilla extract
1 tbs Ujido matcha powder

Bake at 325 for about 25 minutes. Enjoy! 💚
